My Favorite Vegetarian Meals

 I want to start by saying this article is in no way meant to make you feel like you must be a vegetarian, that what you have eaten or are eating isn’t acceptable or that you need to change for any reason. You are enough no matter where you are or what you eat and do.

As I have recently shared, my husband and I have switched to a mainly vegetarian diet.  This was mostly a decision to eat healthier and cleaner.  I was nervous because I thought it would require so much work to eat vegetarian.  It has been the opposite.

Changing to a mainly vegetarian diet has renewed my relationship with food.  We enjoy cooking together and spending time in the kitchen (which used to be a large part of our relationship and we kind of lost it for a while).  It is funny the things you didn’t realize you needed in your life and cooking together is definitely one of those for us.
In honor of this renewed joy of cooking and my relationship with food, I am sharing a few of my favorite vegetarian meals.  Most of these I found on the internet (Google or Pinterest), but I have altered many of them to be something that fits our food tastes and requirements more.  I hope you enjoy!

Vegetarian Buffalo Cauliflower Tacos (you can also make these Vegan)
  • ½ Head of Cauliflower (for 2 people)
  • 1 Avocado
  • Shredded Lettuce or Spinach (preference, is good with both)
  • ¾ Cup of Buffalo Sauce (heat preference, split ¼ cup and ½ cup)
    • I use Frank’s buffalo and Rufus Stubb’s Wicked wing sauce (this one is HOT).
  • 4 Tsp Olive Oil
  • 1 Tsp Garlic Sea Salt
  • 1 Tsp Chili Powder
  • Shredded cheese
  • Ranch
  • Flour Tortillas (I haven’t tried with corn but sure you could do that)
Rinse Cauliflower and chop into medium to small pieces (depending on your preference).  I usually cut off most of the stalks. Preheat oven to 425degrees.

Mix ¼ cup of buffalo sauce, olive oil, garlic sea salt, and chili powder in a bowl.  Toss cauliflower in mixture and place on baking pan.  Bake for 20 minutes (turning half way through).  For additional crispiness broil for an additional 5 minutes at the end. 

While cauliflower is baking prep taco toppings and tortillas.  Once it is finished baking toss in remaining buffalo sauce.  Put your tacos together with all your toppings and enjoy!
 
Bell Pepper Nachos
I love these because they are so simple, and you can really make them however you want
3 Medium to Large sized Bell Peppers (I usually do red, green and orange)
  • ½ of a sweet onion (could also do red depending on flavor preference)
  • 1 tsp Garlic Sea Salt
  • 2 TBS Olive Oil
  • Pepper to taste (you can really do whatever seasoning you prefer)
  • Shredded Cheese (usually us a cheddar jack or Mexican blend)
  • Salsa/Hot Sauce
  • Ranch
  • Toppings of choice
Preheat oven to 375degrees.

Wash and cut up the peppers and chop up onion.  Try to keep the piece larger as you would a tortilla chip.  Mix Seasonings and olive oil in bowl.  Toss peppers and onion in mixture.  Place on baking sheet.  Bake for 10-15 minutes depending on preference of doneness.

Take out and add shredded cheese. Place back in the oven until cheese is melted. 

Take out of oven and add toppings.  We have done black beans, buffalo cauliflower, and scrambled eggs. You can really add whatever sounds appetizing to these.  Then just have fun like you are making regular nachos!

Stepping Out of My Fashion Comfort Zone

I have generally leaned towards the more conservative side of my clothing choices.  Some of this probably stemmed from not liking my body or being comfortable in my own skin.  The other side is just that I really like some of the styles that are more conservative (vintage at heart).  This year though, I have been pushing myself out of my fashion comfort zone. 

It has been a little terrifying but also extremely fun.  I always see pictures of women in clothes and think I LOVE THAT and then I proceed to buy clothing that is the same as all my other clothing.  To get out of this rut I have just simply been going for it. 

I really love the sheer tops with the bra underneath.  I think this look is so chic and beautiful.  I am a size 14 and have been working on getting fit and finally just decided that I was going to buy myself one of these tops and I am going to rock it! I also purchased a second body suit that is open in the back and has a plunging mesh neckline.  I haven’t worn this yet but will be soon. 

Getting out of our comfort zone is always terrifying.  It doesn’t matter if it is something as simple as your clothes or as big as going for your dreams.  It is scary and generally not something we like to do. 

I especially find wearing daring pieces of clothing intimidating because there is always someone who is going to judge you.  Yes, even with my work on self-love and confidence, it still hurts when someone judges me.  It is a normal reaction as a human being to not enjoy being judged by other people. 

I also decided that I am not going to worry about what other people think of my clothing because I am wearing it for me.  I am wearing it because I think it looks beautiful and I enjoy how I feel in it.  Those are the feelings that really matter.  The rest is just noise. 

I am going to continue with my daring clothing choices.  I am currently looking for a matching two piece set that I really love.  It has been a challenge, but I will find something, and I will rock it this summer.
