I want to start by saying this article is in no way meant to make you feel like you must be a vegetarian, that what you have eaten or are eating isn’t acceptable or that you need to change for any reason. You are enough no matter where you are or what you eat and do.
As I have recently shared, my husband and I have switched to a mainly vegetarian diet. This was mostly a decision to eat healthier and cleaner. I was nervous because I thought it would require so much work to eat vegetarian. It has been the opposite. Changing to a mainly vegetarian diet has renewed my relationship with food. We enjoy cooking together and spending time in the kitchen (which used to be a large part of our relationship and we kind of lost it for a while). It is funny the things you didn’t realize you needed in your life and cooking together is definitely one of those for us. In honor of this renewed joy of cooking and my relationship with food, I am sharing a few of my favorite vegetarian meals. Most of these I found on the internet (Google or Pinterest), but I have altered many of them to be something that fits our food tastes and requirements more. I hope you enjoy! *disclaimer I have not altered any of these for food allergies* Vegetarian Buffalo Cauliflower Tacos (you can also make these Vegan)
Mix ¼ cup of buffalo sauce, olive oil, garlic sea salt, and chili powder in a bowl. Toss cauliflower in mixture and place on baking pan. Bake for 20 minutes (turning half way through). For additional crispiness broil for an additional 5 minutes at the end. While cauliflower is baking prep taco toppings and tortillas. Once it is finished baking toss in remaining buffalo sauce. Put your tacos together with all your toppings and enjoy! Bell Pepper Nachos I love these because they are so simple, and you can really make them however you want 3 Medium to Large sized Bell Peppers (I usually do red, green and orange)
Wash and cut up the peppers and chop up onion. Try to keep the piece larger as you would a tortilla chip. Mix Seasonings and olive oil in bowl. Toss peppers and onion in mixture. Place on baking sheet. Bake for 10-15 minutes depending on preference of doneness. Take out and add shredded cheese. Place back in the oven until cheese is melted. Take out of oven and add toppings. We have done black beans, buffalo cauliflower, and scrambled eggs. You can really add whatever sounds appetizing to these. Then just have fun like you are making regular nachos!
